How to Say 'Not Spicy' in Thai (and Actually Get It)

ไม่เผ็ด mâi-phèt — "not spicy." Spicy on its own is เผ็ด phèt, and the mâi- on the front is the same little negator that turns any Thai word off.

Say it as part of your order, in the same breath as the dish. Not after it arrives.

Thai "not spicy" and your "not spicy" are different numbers

This is the part nobody tells you. In a kitchen that cooks for Thai customers every day, mâi-phèt gets you a dish with the chili dialed down — not necessarily a dish with no chili in it at all. Fish sauce, chili paste and dried chili are structural ingredients in a lot of dishes, not toppings that can be removed at the end.

So mâi-phèt is a request, honestly received, filtered through a completely different baseline. If you have genuinely low heat tolerance, say it twice, say it clearly, and pick dishes that aren't built on chili in the first place.

When to say phèt-náwy instead

เผ็ดน้อย phèt-náwy is "a little spicy," and it's the better word for most people. It signals that you want the dish to taste like itself, just gentler — which is what you usually mean. A completely de-chilied version of some dishes is a sadder plate than a mildly spicy one.

Order phèt-náwy the first time at a new place, see where their scale sits, and adjust from there.

What if I like it hot?

Say nothing. The default is the default. If you actively want it Thai-hot, phèt said with a grin is understood, though be aware you may be taken very seriously and it is a one-way door once the wok is going.

The other three flavors

หวาน wǎan sweet, เค็ม khem salty, เปรี้ยว bprîao sour. Together with phèt these are the axes a Thai cook is balancing on every plate, and hearing them used tells you a lot about how food is talked about here — not "good" or "bad," but which of the four is running ahead.

They're also practical. Thai iced coffee and tea arrive sweet by default, and wǎan is the word in the sentence when someone asks you how you want it.
